Basic Farro Recipe

Serves 4

1 cup Bluebird Grain Farms farro
1/2 small carrot, peeled and halved lengthwise
1 rib celery
3 cloves garlic, peeled
1/2 small onion, peeled

Place the farro in a medium saucepan with the other ingredients. Cover with water to two inches above the farro and bring to a boil. Lower the heat to maintain a bare simmer and cook until tender, 30 to 45 minutes. When the farro is tender, transfer to a shallow container and place in the refrigerator to cool. When farro is cool, drain and discard the cooking vegetables.
